Accipiter Enterprises presents a show entitled "Birds of the Gauntlet" using hawks, falcons and performers in historic clothing from various time periods, ranging from the Middle Ages, Renaissance, and Colonial, usually as part of a period festival or faire.

The show consists of three distinct activities. First is the patron interaction, where birds and handlers are intermingled with patrons and participants of the event. The second activity is displaying of the birds in a designated area or Mews. The third activity is a stage presentation demonstrating "free flight" and a simulated "hunt" with a lure, interspersed with an educational lecture. There is ample opportunities for patrons to ask questions and take photographs with the birds.
